Organic Carrot Cake Loaf with Cream Cheese Icing
Moist, warmly spiced, and made with fresh organic carrots, this homemade carrot cake loaf is topped with rich cream cheese icing and baked to golden perfection.
Recipe:
- Mix 1¾ cups organic flour, ¾ cup cane sugar, ¼ cup brown sugar, 1 tsp baking soda, ½ tsp baking powder, ½ tsp salt, 1½ tsp cinnamon, ¼ tsp nutmeg.
- Add ½ cup oil, 2 eggs, 1 tsp vanilla, and 2 cups grated organic carrots.
- Pour into a loaf pan and bake at 350°F for 50–60 minutes.
Icing:
- Beat 4 oz cream cheese, 2 tbsp butter, 1 cup powdered sugar, and 1 tsp vanilla until smooth.
- Spread over cooled loaf.
