Blackberry Balsamic Chicken with Whipped Goat Cheese & Roasted Vegetables

- 4 chicken breasts or chicken thighs
Produce
- 1 cup blackberries
- 1 cup strawberries
- 1 bunch asparagus or broccolini
- Baby potatoes or rainbow carrots
- 2 garlic cloves
- Fresh thyme or rosemary
- Fresh basil (optional garnish)
Dairy
- 4 oz goat cheese
- 2 tbsp cream cheese or plain Greek yogurt
Pantry Items
- Olive oil
- Balsamic vinegar
- Honey
- Salt
- Black pepper
- Garlic powder

- Balsamic glaze drizzle
- Crusty bread or toasted sourdough on the side
Instructions
- Roast the Vegetables
Toss vegetables with olive oil, salt, and pepper.
Roast at 425°F for 25-30 minutes. - Cook the Chicken
Season chicken with salt, pepper, and garlic powder.
Sear in olive oil 5-6 minutes per side until golden and cooked through.
Remove and keep warm. - Make the Berry Balsamic Sauce
In the same pan, add garlic and cook 30 seconds.
Add berries, balsamic, honey, and herbs.
Simmer until berries soften and sauce thickens slightly. - Whip the Goat Cheese
Mix goat cheese with cream cheese/yogurt and a splash of milk until creamy. - Plate Beautifully
Spread whipped goat cheese on the plate.
Place chicken over top.
Spoon warm berry balsamic sauce over chicken.
Add roasted vegetables on the side.
Garnish with fresh herbs and cracked pepper.
Optional: finish with crushed pistachios for crunch.
