1. Herb & Honey Grilled Steak

Ingredients and Shopping List:

  • 1½ lbs organic sirloin steak, cut into cubes
  • 2 organic bell peppers, chopped
  • 1 red onion, cut into chunks
  • 1 zucchini, sliced thick
  • 8 oz mushrooms
  • Wooden or metal skewers

Marinade

  • 3 tbsp olive oil
  • 2 tbsp local honey
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary
  • 1 tbsp fresh parsley
  • 1 tsp sea salt
  • ½ tsp cracked black pepper

    Instructions

    1. In a bowl, whisk together olive oil, honey, garlic, rosemary, parsley, salt, and pepper.
    2. Toss steak cubes in marinade and refrigerate for at least 30 minutes.
    3. Thread steak and vegetables onto skewers, alternating ingredients for colorful presentation.
    4. Grill over medium-high heat for 8–10 minutes, turning occasionally, until steak reaches desired doneness and vegetables are lightly charred.
    5. Serve warm with fresh corn, watermelon, or a crisp summer salad.

    2. Smoky Maple Veggie Skewers (Vegan)

    Ingredients and Shopping List:

    • 1 block organic extra-firm tofu, pressed and cubed
    • 1 zucchini, sliced thick
    • 1 red bell pepper, chopped
    • 1 yellow squash, sliced
    • 1 red onion, cut into chunks
    • 8 oz mushrooms
    • Cherry tomatoes
    • Wooden or metal skewers

    Marinade

    • 3 tbsp olive oil
    • 2 tbsp pure maple syrup
    • 2 tbsp tamari or soy sauce
    • 1 tsp smoked paprika
    • 2 cloves garlic, minced
    • ½ tsp black pepper

      Instructions

      1. Whisk together olive oil, maple syrup, tamari, smoked paprika, garlic, and pepper.
      2. Toss tofu and vegetables in marinade and let sit for at least 20–30 minutes.
      3. Thread tofu and vegetables onto skewers, alternating colors and textures.
      4. Grill over medium heat for 10–12 minutes, turning occasionally, until vegetables are tender and lightly charred.
      5. Serve with brown rice, quinoa salad, or grilled corn for a fresh summer meal.
