Mother’s Day Poached Egg Avocado Toast + Organic Fruit
Ingredients and Shopping List (serves 2):
- 2 slices healthy bread (sprouted grain or sourdough)
- 1 ripe avocado
- 2 fresh organic eggs
- 1 tsp lemon juice
- Sea salt & black pepper
- Everything bagel seasoning
- Red pepper flakes (optional)
- Olive oil drizzle
- 1–2 cups mixed organic fruit (berries, melon, pineapple, grapes)
Instructions:
- 1. Prep the fruit: Wash, slice, and arrange your organic fruit in a beautiful bowl or plate. Set aside.
- 2. Toast the bread: Lightly toast until golden and crisp.
- 3. Mash the avocado: In a bowl, mash avocado with lemon juice, a pinch of salt, pepper, and a sprinkle of everything bagel seasoning.
- 3. Poach the eggs:
- Bring a small pot of water to a gentle simmer.
- Add a splash of vinegar (optional).
- Crack each egg into a small bowl, then gently slide into the water.
- Cook for about 3 minutes for a soft yolk. Remove with a slotted spoon.
- 4. Assemble:
- Spread avocado generously over toast.
- Top each slice with a poached egg.
- Finish with a drizzle of olive oil, a pinch of salt and pepper, and a generous sprinkle of everything bagel seasoning (plus red pepper flakes if desired).
